Baked Eggs with Chorizo


If you're looking to improve your energy levels, start your day by eating protein and good fats that will stabilise your blood sugar and leave you feeling satiated and full for longer. Try this baked egg recipe from my partner's cookbook that only takes about 10 minutes to whip up...!

Ingredients:

  • 1/2 brown onion (finely chopped)

  • small mushrooms whole or diced (the recipe says field mushies)

  • 100g Chorizo (could use bacon pieces?)

  • 1 tbsp olive oil

  • 3 eggs

  • 1 diced tomato (Roma)

Method:

  1. Heat Oven to 200 degrees celcius

  2. Heat a fry pan to high.

  3. Add oil then onions and cook until tender (1 min approx)

  4. Add the meat and mushies then cook for another couple of minutes or until lightly browned.

  5. Add tomato and season to taste

  6. Crack eggs over mixture and season again

  7. Place in oven for about 5 minutes or until eggs are cooked to your liking.

  8. VOILA!
